Convenience factory for an SDK-level WalletDocumentManager.
The returned manager wraps EUDI EudiWallet document APIs and exposes the simplified WalletDocument model to the app.
When WalletSdkOptions.trustedTypeMetadataRegistries is configured, the manager also enriches issued documents with optional VCT metadata and rendered SVG templates, caching them locally in the SDK.
